Recipe
Makes 6 muffins
Ingredients
6 eggs
1 medium tomato diced
3 tablespoons chopped parsley (or use your favorite herb!)
2 tablespoons vegetable oil
1 teaspoon salt
1/4 teaspoon pepper
Optional fillings which could be added are feta cheese, cheddar cheese, lean chopped ham, lean chopped beef slices, chopped spinach, chopped spring onions, chopped sun dried tomatoes, chopped roasted red peppers.
Method
Heat the oven to 375 F.
Generously grease the muffin cups.
Spoon your favorite fillings into the muffin cups except for any cheeses you are using.
Season the muffin cups with salt and pepper.
Crack an egg into each muffin cup.
Sprinkle any cheese on top (if using).
Bake for 30-35 minutes until the top of the muffins are set.
Run a knife around the inside of the muffins and let them rest for 5 minutes.
Remove from the muffin cups and enjoy your healthy snack!
Store in the refrigerator for 3 days!
