Blackened Barbecue Chicken with Guacamole
Change up your average chicken barbecue with this delicious blackened dry rub! For perfect results prep the chicken the day before and wow your guests with this delicious summer barbecue dish!
Recipe
Dry rub and guacamole for 6 chicken fillets
Ingredients
2 tablespoons onion powder
1 tablespoon garlic powder
2 tablespoons paprika
1 tablespoon Italian dry herbs
1/2 tablespoon black pepper
salt and pepper
olive oil
3 avocados
3 tablespoons sour cream
3 tablespoons lemon juice
1/2 cup chopped fresh cilantro
Method
Season the chicken fillets with salt and pepper.
Rub the fillets with olive oil.
Mix the dry rub ingredients together and rub into the chicken fillets.
Barbecue or pan fry on a high heat to sear the spices into the chicken.
Finish off the cooking by placing the chicken in a 375 F oven or barbeque until cooked through.
In a blender process the avocados, sour cream, lemon juice and cilantro.
Adjust the seasoning and spoon over the chicken fillets alternatively serve in a bowl on the side.
Serve Spanish rice and seasonal vegetables as sides.
