Lime Drizzled Shrimp

This seafood dish is great as a tapas side dish or used cold to garnish a salad appetizer!

Serves 4

Ingredients 

12 raw jumbo shrimp in their shells

4 limes

olive oil

2 garlic cloves finely minced

splash of vermouth

2 tablespoons finely chopped parsley

Method

  1. Grate the rind of the limes and reserve the juice

  2. Clean and deshell the shrimp, keeping the tails intact.

  3. Heat the olive oil in a pan, add the garlic and shrimp.

  4. Pour in the lime juice and rind.

  5. Add a splash of vermouth and adjust the seasoning.

  6. garnish with the chopped parsley.

    Serve with crusty baguette bread!
