Lime Drizzled Shrimp
This seafood dish is great as a tapas side dish or used cold to garnish a salad appetizer!

Serves 4
Ingredients
12 raw jumbo shrimp in their shells
4 limes
olive oil
2 garlic cloves finely minced
splash of vermouth
2 tablespoons finely chopped parsley
Method
Grate the rind of the limes and reserve the juice
Clean and deshell the shrimp, keeping the tails intact.
Heat the olive oil in a pan, add the garlic and shrimp.
Pour in the lime juice and rind.
Add a splash of vermouth and adjust the seasoning.
garnish with the chopped parsley.
Serve with crusty baguette bread!
