Lentil Soup

This earthy hearty winter soup is flavorful and full of nutrition. Enjoy it as an introduction to your next dinner party or simply for your next lunch meal! This soup freezes extremely well!

Serves 8

Ingredients 

2 tablespoon olive oil

450g brown lentils

2 russet potatoes peeled grated

1 large onions

1 tablespoons minced garlic

1 tablespoons minced ginger

2 teaspoon salt

1 can coconut milk

1/2 tablespoon coriander spice

½ bunch of fresh copped coriander

Chicken stock or vegetable stock (approx. 4 litres)

Method

  1. Sauté the onions in the oil, add the garlic and ginger, sauté for 1 minute.

  2. Add remaining ingredients except the fresh coriander.

  3. Simmer uncovered until potatoes and lentils are cooked through.

  4. Adjust the seasoning, add the fresh coriander.

  5. Serve with French loaf bread - Enjoy!
