Seafood Cake

Enjoy this delicious salmon and shrimp seafood cake as an appetizer or simply as a light lunch. This seafood dish is flavoured with tarragon and coated in panko bread crumbs giving the cake a gorgeous golden brown color!

 Recipe

Serves 4

Ingredients 

2 tablespoon olive oil

2 shallots diced

2 garlic cloves chopped

1/3 fillet of salmon chopped

10 tiger shrimp shelled and chopped

2 teaspoons dried tarragon

1 1/2 teaspoons salt

juice of 1/2 lemon

1 tablespoon brown sugar

1 egg white

1/2 cup of processed panko bread crumbs

1 teaspoon dried Italian herbs

Method

  1. Process the panko bread crumbs with the Italian herbs.

  2. Sauté the shallots in the olive oil, add the garlic.

  3. Deglaze with the lemon juice and remove from the heat.

  4. In a bowl mix all the ingredients except the panko bread crumbs.

  5. Portion the seafood cakes into balls and roll in the panko bread crumbs.

  6. On a medium heat brown the seafood cakes on all sides.

  7. Place the seafood cakes on a baking sheet and bake for approx. 40 minutes at 350 F until an internal temperature of 150 F is reached.

  8. Voila! Seafood cakes are served!
