Chicken Liver Pate

Serves 8

Ingredients 

250g chicken livers

125g bacon diced

1 onion diced

1 garlic clove minced

2 tablespoons tomato puree

a couple of drops of tabasco

125ml of sherry

1 teaspoon of salt

1 egg

60ml chopped parsley

60ml of melted butter

Method

  1. Sauté the bacon, add the onion, garlic.

  2. Add the chicken livers, tomato paste, tabasco, parsley, sherry and salt.

  3. Cook for 1 minute.

  4. Transfer the mixture to a liquidizer, add 1 egg and process until smooth.

  5. Transfer to a baking dish, pour the melted butter over the top and cook in a bain-marie at 160 Celsius for 40 minutes.
