Chicken Liver Pate

Ingredients
250g chicken livers
125g bacon diced
1 onion diced
1 garlic clove minced
2 tablespoons tomato puree
a couple of drops of tabasco
125ml of sherry
1 teaspoon of salt
1 egg
60ml chopped parsley
60ml of melted butter
Method
Sauté the bacon, add the onion, garlic.
Add the chicken livers, tomato paste, tabasco, parsley, sherry and salt.
Cook for 1 minute.
Transfer the mixture to a liquidizer, add 1 egg and process until smooth.
Transfer to a baking dish, pour the melted butter over the top and cook in a bain-marie at 160 Celsius for 40 minutes.
