Roasted Cauliflower Salad!

Step up your barbeque game with this delicious and nutritious salad! Just before serving combine all the ingredients with a simple home made dressing and voila ……. your guests are wowed!

Serve 6 people

Salad Ingredients

  • 1/2 cauliflower washed and broken into florets

  • 2 cups spinach leaves

  • 1/2 red bell pepper chopped

  • 1/4 cup finely chopped parsley

  • 1/2 crumbled feta cheese

  • Olive oil

    Simple Dressing Ingredients

  • 45ml olive oil

  • 45ml apple cider vinegar

  • 1 tablespoon sugar

  • 1 teaspoon salt

  • 1/2 teaspoon mustard

  • 1/2 teaspoon black pepper

    Method

  1. Drizzle olive oil over the cauliflower florets and lay on a cookie sheet. Lightly sprinkle with salt and pepper.

  2. Bake at 375F until caramelized and golden. (Approx 35 min)

  3. Cool the cauliflower.

  4. Combine all the salad ingredients and place onto a serving dish.

  5. Mix all the dressing ingredients and pour over the salad just before serving!
