Chimichurri Sauce

Oh boy, do I have a winner to share with all of you! This versatile sauce adds absolute life to virtually any dish. It especially goes very well with chicken. This sauce can serve as a basic marinade, blended with butter to make a stuffing, spread inbetween slices of French loaf bread or use as a condiment. It is THAT versatile!

 Recipe

Makes 250ml of sauce

Ingredients

  • 2 Tablespoons chopped garlic

  • 2 Tablespoons chopped ginger

  • Zest and juice of one large lemon

  • 3 Tablspoons chopped red onion

  • 3 Tablespoons chopped parsley

  • 3 Tablespoons chopped mint

  • 3 tablespoons chopped coriander

  • 2 red chillies deseeded and chopped

  • 2 teaspoons salt

  • 150 ml olive oil

Method

  1. Combine all the ingredients together in a food processor.

  2. Pulse until well blended.

  3. Taste for salt, add more if needed.

  4. Ready for use!

  5. Keep refrigerated.
