Jerk Chicken

This delicious spice originates from the Caribbean. It is enjoyed around the world especially cooked on barbeques during the summer months!

Serves 4

Spice Ingredients 

2 teaspoons onion powder

2 teaspoons garlic powder

1 teaspoon chili powder

1 teaspoon ground all spice

1 teaspoon dried Mediterranean herbs

1/2 teaspoon garam masala

1/4 teaspoon nutmeg

1 teaspoon salt

2 teaspoons brown sugar

1/2 teaspoon ground black pepper

4 skinless chicken breasts

2 tablespoons canola oil

Method

Place chicken pieces in a large bowl. Rub the oil and spice mix all over the chicken pieces. This could be done in advance and kept refrigerated until ready to cook. Over a hot skillet brown the chicken pieces on all sides then place in a preheated oven 350F for 25-35 minutes and cook until the internal temperature of the chicken pieces has reached 165F in the center. Allow the chicken to rest for 5 minutes before serving.
