Corn and Avocado Salad
This incredibly healthy and delicious side salad has it all! The crunch of the sweet corn, the creamyness (is that such a word) of the avocado and the freshness of the salad dressing! Easy to prepare and a sure crowd pleaser!

Recipe
Serve 6 people
Salad Ingredients
4 cups of spring mix lettuce
4 corn on the cob (corn sliced off)
2 cups halved cherry tomatoes
2 avocados peeled and cubed
1 cup fresh coriander chopped
Dressing
60 ml olive oil
40 ml red wine vinegar
1 teaspoon salt
4 teaspoons brown sugar
2 teaspoons apricot jam
Method Ingredients
Combine the dressing ingredients and mix well (preferably in a food processer ).
Place all the salad ingredients except for the avocado in a large mixing bowl and combine well.
Place the avocado on top of the salad and pour over the dressing.
Voila!
